One of The Cotswolds’ most popular pubs, The Swan at Southrop re-opened its doors in January 2023, following an extensive refurbishment by sibling establishment Thyme’s dynamic brother-and-sister duo, Charlie and Milly Hibbert, Chef Director and General Manager respectively.
The pub started life in 1606 as a bakehouse selling bread and ale to the Southrop Manor Estate’s farmworkers. It has remained a popular gathering spot ever since and now boasts a walled garden with alfresco dining tables, bar with local ales, wines and other delights, snug for cosy gatherings, carousal for feasting and watching great sporting events, dining room and benches and tables out front, towards the village green.
Milly has done an incredible job on the interiors, using the Bertioli fabrics designed by her mother Caryn, and sourcing ceramics and artwork, all available to buy. Charlie has the enviable asset of an extensive kitchen garden at Thyme, so the menus are seriously seasonal and properly crowd-pleasing. His Sunday lunches are an absolute must.
The Swan at Southrop is open for lunch from midday – Thursday to Sunday and dinner from 6pm – Wednesday to Saturday.
